There are no bad rocket projects. Good on you for turning your boys sights to the sky. And, showing them that their own hands can take them there.

I'm a big believer in learning through hands on projects where my kids can apply their knowledge and maybe learn some maker skills along the way.

When my son was young we were always doing projects like this. One rocket project that stood out was when my wife had the idea to make a rocket birthday cake. Basically it was a large (width/length) single layer birthday cake with 6 "holes" in it that sitting on a custom platform. Inside the platform were 6 rockets. The holes in the cake were rocket silos. When the time came, the rockets launched out of the cake to the delight of all the other 10 year olds.
...yes this was done outside...
