Easy grill work with family gathering potluck-style: jerk-style Jamaican barbecued pork tenderloin. Wide mix of spices, great flavor, moist and tender.
Fired up the grille tonight as it is so stinkin' cold and I burned too many btu's shoveling snow. Petite fillet, with broccoli, mushrooms, salad and a baked spud. Washed down with an American lager.
my wife had a hankering for some pulled pork and then she hands me a Cook's Illustrated recipe for it. Easy indoor cooking method and 7 hours later, with an ok vinegar bbq sauce, pulled pork. really good and i cant wait for leftovers for dinner tonight.
A quick weeknight veg meal: Chana (Chickpeas cooked with onion, garlic, Indian spices) topped with fresh chopped onions and lemon juice, chapatis, white rice. Cold plain yogurt on the side too.

filling:
3 large apples
6 oz chopped ham
3 tsp sugar
3 tsb cinnamon
1 tbsb butter
1/4 cup water
1 strip thick sliced bacon
make a compote with the apples, sugar, butter, and water. add the cinnamon, chopped ham, and bacon after most of the water has cooked off and you have a light syrup in the saucepan.

1 C ground oats (use oatmeal and a hand grinder)
1/2 C wheat bran (substitute whole wheat flour if you want something less grainy -- for bike food, I'd use 1.5C white four. these are for breakfast and snacks, so I wanted a lower GI and more fiber to slow down the digestion)
1/2 C whole wheat flour
1 C white flour
3 tsb baking powder
2 1/2 tbsb cold butter
1 C whole milk
mix the dry ingredients. cut in the butter with a pastry blender until the mix has the consistency of meal (like a biscuit dough). add the milk and mix quickly to get a soft dough. add flour if the dough is sticky, to get a soft ball. knead the little fucker for a few minutes. divide the dough in half, then into fourths, then into eighths.
2 beaten eggs
roll out each ball on a lightly floured doughboard to a 5-6 inch disk (the dough will be thin, so handle carefully), scoop in two heaping tablespoons of the filling. brush the edges of the disk with beaten egg, fold over, then brush the edges with egg and fold over to get a good seal.
after all eight are on the baking sheet, brush them liberally with beaten egg, cut some steam slits, bake for 20min at 350.
you should have a thin but hearty whole-grain pastry. the filling is where the calories are.
each one ends up being about 300cal, 13g pro, 50cho, 7g fat.

My local market had a ham lying around that needed to be cooked. Tasted like pork candy.

I've posted my Cuban Black Bean reciped before and this was a portion thawed and "embellished"
Bowl of cuban black beans with a pile of fresh baby spinach on top into an microwave (gasp) for 5 mins.
Top with parmesian, sliced avacado, chopped tomato, salsa and a handfull of cilantro. DIG IN.
This was ridiculously good and it was dinner in about 10 mins.

SuperBowl mayhem.
I finally decided that high end hogies were the ultimate StuporBowl party food.
My superbowl setup. I'm making everything for high end hogies :) I've got fresh crusty french bread from a local french bakery.
1. Med Rare roast beef dry rubbed with a grind of salt, pepper, corriander. Cooked to 130'ish F
2. turkey Breast dry rubbed with similar to above + smoked paprika
3. eggplant spread made with thin sliced eggplany roasted with olive oil, pepper than two days prior layered into a bowl with sauted shallotts and a ton of garlic, roasted red peppers, diced sun dried tomatoes, oregano, thyme than used as a spread for bread
The menu
1. PMB - french bread with ripe mango dusted with cayenne + crisp pancetta + basil leaves (this is insanely good)
2. Roast Beef - french bread + lemon aioli, arugala, sun dried tomato (smack yo momma good)
3. Turkey - french bread + cilantro + tomato slice + munster + seeded mustard ( drool )

We're doing some themed stuff here. I've got 4lbs of brats from the deli, the good ones, not the over filled with fat variety. 5lbs of wings. Beer and cheddar soup. I'll also be preparing a desert near and dear to my heart now after last weekend's BBQ festival, the deep fried Twinkie.
Way to not hold back Jon, dig it.
