Strep running through the house this week and the kids requested comfort food.

They do regular waffles and I do one with an egg and chili oil.

    A bit of Provence

Boneless and skinless chicken thighs, artichoke hearts, Yukon potatoes, cherry tomatoes, garlic and rosemary. I don't normally eat beef or chicken but this a temporary break from fish and vegetables. Chicken thighs packed more flavor than the breasts would have -Mike G

I picked up some fresh roasted red pepper ravioli from the neighborhood Italian store and we used some leftover pizza to make focaccia…nice way to start the weekend.

    Three months dormant this thread!

Yesterday my wife was working a charity event and I had the kids (multiple soccer games) and puppy all day, so I did an easy sheet pan.

Parboiled some yellow skin potatoes. Then thin sliced chicken breasts, onion, mushrooms, red peppers, cherry tomatoes, capers, and lemon. Roasted at 375 for a bit then a few mins broiled at 450.

So easy, and the pan juices were to die for sloshed over the top of everything. Was gonna boil some frozen peas too but ended up not bothering.

You inspired me to make this dish last night. Thanks !!!
Very good indeed. I used thyme instead of oregano.
Already married. However, one thing I've learned over these 39 years is that you have to keep on trying.

Made some black radish to go with some Hake(not shown). My dad during holidays would always insist on black radish salad. This was sauteed in butter with parsley and Parmesan. One day I'll try it raw. Supposedly way healthier than red radish. -Mike G
