    Local paper profiled the dude and his pizzeria. For a while, I thought I was reading the f'builder forum wisdom from some of the masters here. One person, says no a lot (and gets called "bad at customer service" in the proccess), charges what its worth-whingers be damned... and is at the top of what he does.

    The Truth: ďThe truth of pizza? I think it means that youíre, first of all, the pizza man. Youíre a pizzamaker. I donít feel that you can run a pizzeria and make pizza by taking a class for a week from somebody who isnít a pizzamaker and then come back and teach your guys in the kitchen how to do it and then itís equal to someone who is a pizzamaker.

    On Expansion: ďThe amount of opportunities presented to me over the years are sick, and Iíve never take any, because I never felt like it was the right thing to do. How am I going to make pizza? Ö Itís just a symptom of the world right now. Itís so heartbreaking. Even places that have been in business for years and years, one place was always good enough for first generation, but not the second or third generations. Now all of a sudden thatís not good enough, they have to open a second place. A hundred years in business. One is good, but now, no. We need two.Ē

    On How He Recognizes a Great Pizza: ďWhen Iím moving it in the oven, before it comes out, I can feel the way that it is. It feels different when you pick it up and lift it off the floor. When itís the right way, thereís a feel. I know it already. Once it comes out, itís the way it looks, the aesthetics of it. The way the crust is cooked, the way it pops. It should look magical and alive, shiny and glistening.Ē

    He's got a nice stable of sleds, too. A very sweet Soulcraft SS among them.

    I get the no expansion thing, but a lot of restaurant owners feel they have to expand so that they can help the people (employees) that have been loyal to them move their careers forward, as well. Not sure if this is as applicable in this type of environment with only three people working there, but who knows down the road.

    He has a bike show at his restaurant every year, too. I haven't had his pizza yet but it's on my list.

    He also has a peg Marcelo with steel fork as well, and a IF XS if I recall. Great rider.

    I'm trying to make it to San Francisco with my bike in mid September. Expect a shout out to vsalonistas for some company one evening. I need to see this pie, I need to taste this pie.

    I ate his pie when visiting NYC. It was the best I have ever eaten and I lived in Switzerland for 6 years (they know good pizza there). My wife dragged me after reading an article about the 'ultimate pizza' in NYC - I was a skeptic before but a convert upon the last bite.

    I had no idea he rode bikes at the time - I heard about his love about a year ago.

    I met Anthony a couple of years before he moved out west. We started bullshitting at a local trailhead. The conversation sparked because we were both riding unusual custom 29ers. We spent an hour and a half solving the world's problems. Anthony really is one of the good guys and the west coast is lucky to have him.

    Anthony is indeed a master of his craft, not to mention as nice a person as you're likely to meet.

    If you reside in the SF area, you'd be well-served by checking out what he does. He and his pizza are certainly missed back East.
