Well, if you live at sea level, you could make a game out of getting wasted on 4 or 5 cheap beers. Or, if you're a beer nerd, one imperial stout. This can be done anywhere. Elevation turns cheap beer into absinthe.

You could check out the Buckhorn Exchange Restaurant where there is an interesting game menu. Spend some time checking out the large collection of taxidermy on the walls, including a whale penis (if you're into that sort of thing). I recall they have CO state liquor license #1.
It's more of a novelty, but interesting and the food isn't bad.
There was an indoor go-kart racing venue in Denver that was a fun place to kill time before going out for beers and dinner. Address escapes me, but should be easy to find with a smart phone.
I'm hoping the weather is good enough to ride. Seriously. If the forecast in the days leading up to this look good I'm throwing the bike into a box and bringing it with me.

Have coffee at Crema, a high-end bean joint owned by a cyclist and overall good guy. Then s$%ke some w**d and have dinner at The Populist.

thai food: swing thai 1612 Wazee Street in the CBD, recall the entrance being in some alley behind the building
The convention center right off one of the local bike/walk trails, would be good for some short/quick morning rides.
I've only been to Denver once, but stay hydrated is my recommendation. I didn't and spent the first couple days of my visit a bit miserable.

If you are veg, there is incredible veg at Watercourse, probably the tastiest in the whole world.
There is a great Greek place called Pete's Central One.
Two Fisted Marios has good pizza.
If you want to drive 1.5 hours my LBS has 2 rental snow bikes, I can show some people around.

Wahoo's Fish Taco has good (quick and cheap) food. La Boheme and Diamond Cabaret are good strip clubs. The U.S. Mint is cool. Lucky Strike bowling is fun. Cheeky Monk Belgian has all your favorite Belgian beers.

People watching from the windows of the Colfax Avenue bus to and from the airport is second-to-none.
Start slow, then taper off.
Being from SF, just say no to anything seafood in Denver...unless maybe its Sushi Den. Matsuhisa "new style" sashimi is more popular out here than SF, and something worth a try. You probably know all about Wahoo....
and that goes for burrito's as well.
Go for some Bison and wild game places, otherwise the hot/trendy places to eat are Duo, Linger, Fruition, etc
Cross country skiing. Somewhere north of the city. Maybe near Boulder. I don't remember actually. Just remember seeing people schussing along and thinking why am I in this stupid effing car.
